A Family Favorite Dessert

My Aunt Millie's Graham Cracker Nut Roll is a staple around the holidays. If my aunt is not making it, then my sister is, or my oldest son Joshua. We all love it and I can't imaginenothaving it around this time of year.

A little background... when I was a little girl, I spent lots of time with my Aunt Millie. I was a flower girl in her wedding, then I used to babysit her daughters and go on trips with her and I even worked with her one summer.

She's special to me... always has been and always will be. And this recipe of hers? It's pretty special too!

Aunt Millie's Nut Roll

Before any of my family sees this and wonders about the title... I should note that we we really call it "Aunt Millie's Nut Roll", but I thought adding in the "Graham Cracker" part would be a little more descriptive for the sake of all the search engines and internet bots that crawl around categorizing stuff online.

So if you're in my family and wondering... I didn't alter the recipe at all.. just the title a little bit!

We actually look for excuses to make the recipeanytime of year, but especially for a Thanksgiving get-together or Christmas party... or if you make candies as gifts, give this one a try!

I don't know where Aunt Millie got this recipe... I should've asked her! It's a unique recipe and I honestly can't remember ever seeing it anything like it anywhere else - online or otherwise. (I'm sure someone will correct me if I'm wrong and it's a famous recipe that everybody know about, right?)

Graham Cracker Nut Roll Ingredients

You'll only need a few things for this recipe, and most of them are staples in any baker's house. The ingredients are graham cracker crumbs, butter, marshmallows, pecans and powdered sugar.

You just melt the butter and marshmallows in the microwave - then stir in the graham cracker crumbs and nuts and mush it all together until you get a big ball of gooey goodness...

Then you form a log (or two or three is better) and roll it in powdered sugar. Once it's set, slice it up and serve... perfection!

Description

Aunt Millie's Graham Cracker Nut Roll is an easy and unique no-bake dessert made with just 5 ingredients.

Instructions

  1. Put the marshmallows and cubed butter into a microwaveable bowl and microwave for 1-2 minutes, until completely melted and smooth (it'll look just like the melted mixture in my homemade fondant.)
  2. Stir in the graham cracker crumbs and pecans. Mix together with buttered hands until it's thoroughly combined. It's gonna be sticky, but shape it into two or three balls as best you can.
  3. On a smooth surface (I like to use a large cookie sheet or jelly roll pan) spread out your powdered sugar.
  4. Dump the balls onto the coated surface and begin shaping into logs, about two inches in diameter. Keep rolling and shaping until the logs are well coated, then roll them up in wax paper.
  5. Allow them to sit and rest until they cool and firm up. You can also stick them in the fridge to speed this up. If you're not going to be eating them right away, tape up the loose edges of the wax paper to keep them sealed and fresh.
  6. If you want to eat them sooner, just go ahead and slice them up! It'll squish down a little as you slice, but don't let that bother you!

    It sounds like a giant rice Kirsty square? Sometimes the simple thing are just the best. After I saw the recipe and the finished product my mind has gone AWOL with ideas for decorating the log , drizzled ed white or dark chocolate , a sprig of Holly !, oh Than You Rose
    I love making my fancy cakes but this also bright to mind another fav and simple dessert , does anyone remember the Christie chocolate logs with the wafers and fresh cream ?

    I just opened my email and am already in the kitchen getting my ingredients together! Sounds amazing! Marshmallow and pecans!!!! And i have a box of the new vanilla graham crackers. I may have to cut it in half though because I simply dont wamt to go out in this wind for another box

      Oh gosh - too many factors to consider? Probably 30-40 slices total for the size I do them? It depends on how big around you make your rolls, how thick you slice it and how many slices you consider a serving?!

    How many graham crackers does a pound work out to?

      A box used to be a pound, but as with all things, it's shrunk and I think now it's 14-15 ounces in a box? So a box, plus a few extra. I have a scale that I use to measure them out but it's been awhile and I don't remember exactly off the top of my head. THe good thing is, this recipe doesn't require super precision.

    We have a similar one in my family, but we use condensed milk to stick the graham cracker together and keep the mini marshmallows whole! I don’t know where the recipe came from but we call it “refrigerator roll” which ppl not in the know have definitely made fun of! This version sounds delicious I’ll have to make it!!

    I think I did a lot of things wrong. Would it be possible to update your recipe to say how many ounces of marshmallows and what size of box of Graham crackers? I also bought chopped pecans, but I should have like pulverized them instead I think. These "rolls" I made just fell apart immediately. Complete waste of $. I'm sure I messed it up, but I'm not an experienced baker.

      Both of those ingredients are listed as 1 lb. or 16 ounces. I don't use pulverized - I use chopped. I have videos of me making them if you think that might help.

        Rose, I have been looking for this recipe for years. My mother made these every Christmas when I was a child in the early 1950's. I think it was a popular post war favorite. After she passed away it was a recipe I could not find in her recipe box or books.
        It was my favorite holiday cookie and left me with so many childhood memories. So today, Christmas Day 2020, I did another search and found this! It's made my day and definitely a gift! I'm very anxious to make them! Thank you!

    Have been looking for Grandpa Hamby's Graham Cracker Cake recipe everywhere and can't find it. So Glad you change the name of your so it would pop for me. Ours called for condensed milk as well, but when my sister tried it... well it was not the same. We will now try yours and hope for the best. I'm pretty sure it was Grandpa's and Daddy strong hands doing the mixing that made it the best!! thanks for the post.

    My mother passed along this recipe to me years ago and my kids and grandkids love it. They beg me for it every year for Christmas. However she used 1 can of condensed milk instead of the butter and marshmallows. I will have to try it this way as well. Merry Christmas and thank you for keeping the recipes from my childhood alive.

    I made these yesterday and overall, they are a winner. I did google other recipes and found some variations, but in the end I stuck with yours. I did add both cinnamon and vanilla because everything tastes better with vanilla. I'm glad I did. The cookies have an interesting texture, somewhat similar to RCT, probably because of the marshmallows. I liked that they aren't sickeningly sweet because we have enough of those recipes elsewhere. I love the pecan flavor. Next time I might add some chopped dates, dried cherries or possibly some chocolate chips. I gave it 4 stars because I felt it needed the vanilla and cinnamon. Great recipe and will make again.

    Hello Rose for years my Grandmother and Aunt made so many different things and my Mom. They are no longer here and I miss what they use to make. Lately I have been thinking about the things they made. I found the recipe for my Aunt's cake, Cheese straws and cheese biscuits with pecans. So I have started making them. I also make my mom's sweet potato pie. I have been trying my best to find something that my Grandmother made when I was little. I remember it being Graham crackers and her rolling it in powdered sugar. I never saw her make it. Tonight I thought about trying to find it. And I did!! Thank you so much. I am going to try and make it.

    So I totally grew up with this recipe. My mom would make it every year. In her recipe she would leave about a cup of marshmallows whole and mix them in with the pecans and graham crackers. We never dusted ours with powered sugar. Those are the only differences. She would call it a yule log I believe. That's what I remember. I found the recipe a few years ago after my mom passed away. So now it's even more special.

    I am confused about the graham crackers.....16 oz? What would that be in "sleeves"? A whole box says 14.25 oz Honey Maid. So the recipe calls for more than one box? Crushed?

    My mini marshmallows are in a 10oz package.....so the recipe calls for more than one package of mini marshmallows?

    I tasted this recipe recently and it is FABULOUS .....and I do not want to mess it up when I try to make it.

      This is an old family recipe that was written back when marshmallows and graham crackers came in 1 pound boxes and bags (I can still get marshmallows in 1 pound bags here). So yes, you would need more than a box and more than a bag if yours are smaller. I'm not sure about sleeve size (or if they're the same); we use a scale to weigh out the ingredients. Oh and yes, you would need to crush the crackers if you can't buy boxes of the crumbs.
